Healthy recipe: Udipi neer dosa

The udipi neer dosa, made of rice and coconut, is a unique and delicious dish of South India. This dosa is not only nutritious but also low in calories. It is a very versatile dish and can be eaten at lunch, breakfast as well as dinner. This dosa is a great source of carbohydrate and provides your body with energy to carry out several functions.   • 2 and a 1/2 cup rice
  • 1 cup scraped coconut
  • Salt to taste
  • Oil to grease

Method:

  • Wash and soak rice in 4 cups of water overnight. Drain and grind to a fine paste along with scraped coconut using little water.
  • Heat a non-stick pan and pour just enough oil to grease. Sprinkle some water and wipe clean pan with a muslin cloth.
  • Stir and pour a ladle full of batter, taking care that it spreads in a thin, even layer. Cover and cook in its own steam for 2 minutes and dribble oil on the side of dosa.
  • Remove carefully, fold into a triangle.
  • Serve immediately.
