Try this fibre-rich semolina or rawa dhokla

If you love the Gujrati dhokla, here is a version that is not only yummy but extremely healthy. Prepared with semolina or suji along with a hearty amount of spices, this dhokla can be perfect for an evening snack and can keep you feeling full for longer. Semolina is made up of durum wheat which keeps you full for a longer period of time and prevents you from overeating. The high-fibre semolina adds a distinct crunchiness to these satiating dhoklas. It is best consumed with a dollop of homemade pudina chutney and green chilli. You may also want to try these yummy semolina parathas and semolina pancakes. Caution: If you are gluten-intolerant, keep away from semolina. Ingredients
  • 1and 1/2 cups semolina (rawa/sooji)
  • 1/2 cup curd (dahi)
  • 1 and 1/2 tsp green chilli paste
  • 2 tbsp oil
  • 1 and 1/2 tsp fruit salt
  • 1 tsp mustard seeds (rai/sarson)
  • 1 tsp sesame seeds (til)
  • 1/4 tsp asafoetida (hing)
  • 1 tbsp finely chopped coriander (dhania)

For serving:

  • Green chutney

Method:

  • Combine the semolina, curd, green chilli paste, 1 tbsp oil, salt, and 1 and 1/2 cups of water in a deep bowl and whisk well. Cover with a lid and keep aside for 30 minutes.
  • Just before steaming the dhoklas, add the fruit salt and 2 tsp of water. When the bubbles form, mix gently.
  • Pour the batter immediately into a 175 mm. (7") diameter greased thali and shake the thali clockwise to spread the batter in an even layer.
  • Steam in a steamer for 12 minutes. Keep aside.
  • Heat the remaining 1 tbsp of oil in a small non-stick pan, add the mustard seeds, sesame seeds and asafoetida and saute on a medium flame for 30 seconds.
  • Pour the tempering over the dhoklas, sprinkle the coriander evenly over it.
  • Cool slightly and cut into equal sized square pieces.
  • Serve immediately with green chutney.
