Healthy Thai raw papaya salad from Chef Nikhil Rastogi's kitchen

Thai raw papaya salad is a hot and sweet classic with raw papayas, cherry tomatoes and French beans dipped in a fish sauce and palm sugar dressing. Papaya is one of the fruits which has the highest concentration of vitamin C. Vitamin C is required for the production of collagen for healthy bones and teeth. French beans make a very nutritious item. They are high in fibre and promote digestive health and also help manage blood sugar and cholesterol levels. The addition of cherry tomatoes not only adds a sweet flavour to the salad but also provides vitamin A, which is vital to boost your immune system and maintain the health of your eyes.
