Healthy recipe: Spinach and chana dal kebab for diabetics

People who suffer from diabetes should eat food that keep their sugar levels in the blood consistent. This kebab recipe is sure to tingle your taste-buds while keeping your blood sugar in control. Chana dal is low in calories and high in fibre and spinach is full of folic acid and vitamin A. Ingredients:For chana dal mixture
  • cup soaked and cooked chana dal
  • tsp turmeric powder
  • tsp ginger garlic paste
  • 1 tsp chilli powder
  • Salt to taste

Other ingredients

  • 2 tsp oil
  • 1 tsp cumin seeds (jeera)
  • 1 cups thick spinach puree
  • 1 tsp kasuri methi
  • 2 tsp garam masala
  • 3 tbsp cornflour
  • tsp black pepper (kali mirch) powder
  • Salt to taste

Method:

  1. Combine all the ingredients in a broad non-stick pan, mix well and cook on a medium flame for 3 - 4 minutes while stirring occasionally.
  2. Cook slightly and blend in a mixer to a coarse mixture. Set aside.
  3. Heat oil in a pan and add cumin seeds.
  4. When cumin seeds begin to sputter, add the spinach puree and cook for 2 minutes till the water evaporates.
  5. Add all other ingredients, including the chana dal mixture, and cook on a slow flame.
  6. Cook for a while and divide the mixture in equal portions.
  7. Roll out each portion into a thin flat round kebab.
  8. Heat another non-stick tawa and cook these kebabs on it.
  9. Serve hot with chutney.
