Preparation time: 30 mins

Cooking time: 20 mins

Serves: 2


1 cup brown rice (soaked)

1/2 cup chopped onion

1/2 cup chopped coriander leaves

1/2 cup finely chopped carrots and cabbage

1/2 cup half boiled chopped French beans

1/2 cup raw mango grated finely

1/2 tsp jeera

1/2 tsp hing (Asafetida)

1/2 tsp garam masala (whole)

1/2 tbsp ghee or white butter

Salt to taste


1. Take a pressure cooker and heat some ghee in it.

2. Add jeera, hing, garam masala and saute until the jeera starts popping.

3. Now add onion, carrots and cabbage, French beans and grated raw mango. Saute it until golden brown.

4. Add salt to it.

5. Now add soaked rice to it and mix it well with the rest of the ingredients.

6. Add water and cook as you would cook your normal rice.



Preparation time: 15 mins

Cooking time: 40 mins

Serves: 2


400 gm chicken

1 cup brown rice soaked in water

2 tsp garam masala

Salt to taste

cup curd

tsp turmeric powder

tsp Red chilli powder

2 tsp chopped ginger and garlic

1 cup chopped onions

1 cup fried onions

1 tbsp green chutney (Grind half a bunch of coriander, 2 chillies, 2 garlic pods and 3-4 pudina leaves)

1 pinch saffron (Kesar)

1/2 cup warm milk

1 tsp kewra jal

3-4 pudina leaves

2 tbsp desi ghee

cup whole wheat flour (atta) dough

Coriander leaves chopped for garnish


1. In a large non-stick pan heat water and add rice, whole garam masala and salt.

2. In another non-stick pan, heat oil and saut the chicken. Add turmeric and chilli powder. Add salt and ground ginger, garlic onion paste to the chicken. Put the lid on and let it cook.

3. While it is cooking, add the green chutney you have made, curd and a pinch of salt (if required) and mix well. Add the rest of the garam masala and fried onions to the mix.

4. Now when you see it becoming a little dry, add saffron in warm milk and add it to the mix. Wait for it to dry.

5. Now once the rice is done, strain it and mix ghee, kewra water and crushed pudina leaves and spread the rice over the chicken.

6. Cover the pan and seal the lid with the atta dough on the sides. Let it cook for 10-15 minutes on low flame.

7. Garnish and serve with raita.



Preparation time: 10 mins

Cooking time: 20 mins

Serves: 2 people


1 cup of Brown rice(soaked overnight and half cooked)

1 cup of grated Nolen jaggery

3 cups of skimmed milk

Chopped nuts of your choice


1. Heat the skimmed milk till it starts looking thicker.

2. Add brown rice to the skimmed milk and cook it while stirring until the mix becomes thicker and the rice is completely cooked. Make sure there are no lumps and the rice doesn't stick to the utensil.

3. Add nuts to the mix.

4. Now at the end, add jaggery and while you see the jaggery melt, turn off the flame and keep mixing it.

5. Serve hot with roasted nuts.
