India Gate brown rice stuffed red peppers with cheese and fresh basil

Serves: 2


2 red peppers

2 cups cooked brown rice

Salt and pepper to taste

cup grated cheese

1 cup tomato sauce

1 onion, diced

2 cloves garlic, minced

Oil for cooking

For garnishing

Fresh basil leaves


1) Cut the peppers in half vertically through the middle and place in a pot of salted boiling water for about 5 minutes. Keep aside.

2) In a pan, heat oil and saut onions. Add garlic and saut some more. Mix in cooked brown rice, tomato sauce, salt and pepper and cook for 5 minutes.

3) Stir in the cheese and cook for 2 minutes more.

4) Spoon this rice filling into the cut peppers and press it down. Sprinkle some more cheese on top.

5) Place these peppers in a pan with one teaspoon of hot oil. Cook for about 2-3 minutes.

6) Serve hot after garnishing the peppers with basil leaves.


India Gate brown fried rice with vegetables and eggs

Preparation time: 10 minutes

Cooking time: 15 minutes

Serves: 3


2 eggs

5 cups cooked brown rice

1 tbsp sesame oil

5 garlic cloves minced

1 tsp ginger, finely chopped and crushed

1 onion, chopped

cup carrots, chopped

cup cauliflower, chopped

1/3 cup peas

2 tbsp soy sauce

2 tbsp chopped spring onions


1. Pour some oil in a pan and scramble the eggs. Let the eggs cook and then keep aside.

2. In another pan, heat some oil and then saut onions. Once they are slightly cooked, put in garlic and ginger and stir fry till you get their aroma.

3. Add the carrots, cauliflowers and peas and cook till the vegetables soften.

4. Add the rice and eggs and season the mixture.

5. Add soy sauce and spring onions and mix well. Turn off the heat in about 2-3 minutes.

6. Serve hot.


Dark chocolate and India Gate brown rice pudding with fresh cherries

Preparation time: 15 minutes

Cooking time: 15 minutes

Serves: 3


1 cup uncooked brown rice

cup water

1 1/2 cups milk

cup dark unsweetened cocoa

tsp vanilla extract

cup stevia powder

For garnishing

3-4 cherries


1) Soak brown rice in water. Sieve and rinse it till the water runs clean. Transfer the rice in pan.

2) In a bowl, whisk together water, milk, dark chocolate, vanilla extract and stevia powder.

3) Pour this milk mixture over the rice and bring to a boil.

4) Reduce the heat and keep stirring frequently till the rice cooks.

5) Garnish with fresh cherries and serve hot.
