Dinner Recipes For Jaundice

Eating bland foods like khichdi, made from dal and rice, benefits people suffering from hepatitis. But here are a few delicious dinner recipes recommended by Naini Setalvad, Nutritionist and Founder of Health For You, that will be light on your stomach and will boost your immunity.

Broken Wheat Khichdi

Broken wheat or fada khichdi: Pressure cook 1 cup broken wheat with all the vegetables and salt. Cook till 3 - 4 whistle. Take a deep non-stick pan and heat it. Dry roast 3-4 curry leaves, add one chopped tomato and cook on a slow flame till it’s pulpy. Put the cooked fada in the tomato puree and mix well. Allow it to cook for another 2 minutes. Samo Rice

Samo rice: Dry roast 1 cup barnyard millet or samo rice till it turns light brown. Heat the pan, add ½ tsp cumin seeds, saute till it splutters. Add 250g white gourd and cook for five minutes. Add samo rice, rock salt and mix well. Add two cups hot water and mix well. Cover it with lid and cook on low flame. Cook for 5 to 7 minutes or till all the water is absorbed and rice becomes soft. Garnish it with 1tbsp chopped coriander and serve.

Vegetable Pulao

Vegetable pulao: Heat a deep non stick kadai. Dry roast 1tsp cumin seeds and 1-2 cardamom. Add 1 cup boiled mixed vegetables (french beans and carrot) cubes, 1/4th cup boiled green peas, salt and 2 tbsp water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Add the rice and mix well and cook on medium flame for 2 minutes, while stirring occasionally. Add 1 tbsp mint leaves; cook till the rice is soft. Baked Baby Potato

Baked baby potato: Bake 100g boiled baby potatoes with the skin till its little crisp from outside. Sprinkle salt, 1 tsp cumin seeds powder and lemon juice. Toss well and serve.

Sweet Potato

Sweet potato/ yam (orange or purple): Soak 500g yam in water for some time so that it's cleaned properly. Wash it properly, boil and peel the skin. Chop the yam into big square pieces. Heat the kadai, dry roast 1tsp cumin seeds and 5-6 curry leaves. Add the yam, put salt, lemon and 2tbsp coriander leaves. Pumpkin Soup

Pumpkin soup: Boil 1 onion, ¼ tsp ginger and 250g pumpkin. Blend the boiled vegetable. Add lemon, salt and pepper to the mixture. Garnish with coriander leaves and serve.
