Breakfast idea for kids: Moroccon Sandwich

Not just a regular cheese or vegetable sandwich, this one comes with a twist and is sure to make your child finish the entire meal even before you know it.

Are you wondering what special breakfast to cook for your fussy eater this weekend? Those ghee-laden parathas, dosa and chole batures are losing their charm and getting a little boring. The best way to get your fussy eater to eat and enjoy a healthy breakfast is to cook one which is completely different, healthy and appeals to his tastes. Remember, the presentation also matters. So, give - grilled aubergine in focaccia, a try. It sounds fancy but is easy to prepare. This unique sandwich preparation is made in Moroccan style with aubergines and tomatoes, which your child will eat without relenting, says Dhvani Shah, pediatric nutrition and Author of the book Don t just feed Nourish your child. Here is another healthy breakfast recipe for your child semolina paratha.

INGREDIENTS

  • 4 square focaccia bread (you can get it in any leading supermarket)
  • 2 thick slices of aubergine
  • 4 slices of firm tomato
  • 2 slices of onion
  • 4 slices of red radish
  • 1 tbsp mozzarella cheese
  • 1 tsp olive oil
  • 1 tsp butter
  • Salt and pepper to taste

METHOD

  1. Brush the aubergine slices with olive oil and grill them on a grill or in an oven till soft and cooked.
  2. Slice the focassia loaf in middle. Butter each side using tsp butter.
  3. Place the grilled aubergine slices, tomato slices, onion slices, red radish slices on one side of the bread.
  4. Season with salt, pepper and top it up with the cheese and put the other slice of bread over it.
  5. Butter the top of the sandwich with tsp butter and grill for 2-4 minutes.
