Thanksgiving Healthy Recipe -- Turkey Breast with Honey-Mustard Sauce

Turkey is a very healthy food serving as a rich source of protein. It also contains less saturated fat as compared to other sources of meat like mutton and chicken. Besides, it is low in sodium and can be a good choice for people with blood pressure. Here is a healthy way to make turkey this Thanksgiving. This special honey-mustard sauce enhances the flavour of the turkey breast, while serving it with saut ed spinach adds even more nutrition to this great-tasting recipe. Happy Thanksgiving!

Prep and Cook Time: 30 minutes

Ingredients:

  • 100g boneless turkey breast with skin
  • 2+1 tbsp fresh lemon juice
  • 1 cups broth
  • 2 tbsp honey
  • 2 tbsp Dijon mustard
  • cup sliced dried apricots
  • 2 tbsp coarsely chopped walnuts
  • 1 tbsp chopped parsley
  • salt and pepper to taste

Method:

Turkey

  1. Preheat non-stick pan with 1 tsp oil light olive oil, groundnut oil, vegetable oil are all good options.
  2. While the pan is heating, rinse and pat the turkey dry and season with 2 tbsp lemon juice, salt, and pepper.
  3. Leaving the skin on, place the breast skin side up on the hot pan. Flip over after 2 minutes to allow to cook on both sides. Depending on the size, it should be cooked in about 7 minutes. Begin preparing the sauce while the turkey is cooking.
  4. The breast is done when it is moist, yet its liquid runs clear when pierced. Remove the skin before serving; it is left on to keep it moist while cooking.

Honey-Mustard Sauce

  1. For honey-mustard sauce, combine broth, 1 tbsp lemon juice, honey, and mustard in a small saucepan. Whisk together and bring to a boil on high heat. Once it comes to a boil, simmer for about 20 minutes. You want it to be reduced to a little less than half the volume you start with. This will thicken and intensify the flavour.
  2. Add apricots and cook on high for another 5 minutes. When sauce is done, add chopped walnuts, parsley, salt, and pepper.
