Love that bowl of salads? Add some boiled eggs & reap all benefits

Are you one of those salad junkies who loves binging on different types of vegetables and dressings? How about making an addition to your salad the next time you reach out for some salad? A new study says that if you add some cooked eggs to your salad, its nutritive value increases. Wayne Campbell from the University of Purdue said that Americans don't eat enough vegetables and if eggs are added to a veg salad, they can reap the benefits of veggies and egg yolks both.

How to make this salad?

According to the study, if you add eggs to a salad made from tomatoes, shredded carrots, baby spinach, romaine lettuce, and Chinese wolfberry, absorption of carotenoids increases 3-9 times. Carotenoids are a class of pigments responsible for the bright colours red and orange and yellow colours of vegetables. This salad includes beta-carotene, alpha-carotene, lycopene and lutein, and zeaxanthin that are also present in egg yolks. If you are eating salads to lose weight, it is important to choose the right vegetables.

How do eggs increase the nutritive value of a salad?

Campbell explained that the presence of lutein and zeaxanthin in eggs increases the nutritive value of vegetables. The research studied the effects in college going population and Campbell claims that the positive effects of this addition will extend to all age groups. You can add these healthy salad dressings to spruce up your salads.

Eggs are known to be extremely healthy and are a rich source of proteins. Although it is commonly believed that eggs are high in cholesterol and egg yolks should be avoided if you are on a weight loss regime, eggs can help one lose weight and should be an integral part of a weight loss diet.

Another study also claimed that eating up to 4 eggs a week can cut your risk of type 2 diabetes. According to the researchers, eggs contain many beneficial nutrients that can have an effect on glucose metabolism and low-grade inflammation which helps preventing type -2 diabetes. Read more..
