Have you seen today's Google Doodle today? Google has dedicated its doodle to the Countess Eva Ekeblad, a Swedish noble and agronomist who discovered how to extract starch from potatoes. This discovery paved the way for gluten-free baking and alcohols such as vodka, moonshine and potato wine.
Her discovery:
Potatoes were introduced into Sweden in 1658 but were not a staple food and in fact during that time there was a food shortage going on in Sweden. Eva Ekeblad researched on it, and her work turned potatoes into stale food in Sweden. Since the supply of wheat, rye and barley were less, potato flour could be used instead. Potatoes were also used in making alcohol. She also discovered a method of bleaching cotton textile with soap and replaced some dangerous ingredients in cosmetics with potato flour. In 1748 she was the first woman to be elected to the Royal Swedish Academy of Sciences.
Here's how you can make your potato flour at home in 4 easy steps:
1. Boil potatoes.Mash and keep it aside( 4kg of potatoes will make around 1 kg of flour). Do not add anything else.
2. Take a dehydrator and lay the mashed potatoes in that. Do not load it as you want everything dehydrated well.
3. Leave it on the dehydrator at 135 for the vegetable settings for 12hours.
4. After it is dried up; it will be all crunchy. After which you'll have just to grind it in the mixer. Keep it in an air-tight jar.
