Eid mubarak! Here's how you can make your favourite Sheer Khurma healthier

You can make Sheer Khurma healthier by just swapping a few ingredients here and there.

It is Eid al-Fitr , and after Ramadan fast, we're sure you want to dig in to yummy food on Eid. If you want to eat healthy, you don't have to give up on your favourite Sheer Khurma. You can make it healthier by just swapping a few ingredients here and there. Let us make mouth watering Sheer Khurma using dates instead of sugar. Here are the ingredients you will need:

  • 5 cups of milk( You can use toned milk as it is healthier than whole milk and has lesser fat content)
  • 100 gms of vermicelli/ Seviyaan
  • 2 and a half tbsp mashed soft dates
  • Half a cup of chopped dates
  • Two tbs raisins/ kish mish(Use Kandhari Kish Mish, it will prevent the milk from churning unlike other types of Kish Mish)
  • 1 and a half tbsp of Ghee
  • 1/2 tbs Elaichi/ Cardamom powder
  • Few saffron strands
  • Half a cup of chopped nuts(Cashew, Pista, Almonds, Walnuts)
  • Half cup makhana

Method:

  • Soak dates in a bowl of milk and keep it aside.
  • Use a non- stick pan to roast the nuts and makhana in ghee until golden. Saute raisins as well and set aside( Make sure the raisins don't blow and burst)
  • In the same pan fry vermicelli till golden. Set that aside too.
  • Bring milk to boil and simmer for 5- 10 minutes. Make sure you keep stirring it from time to time to prevent the milk from burning.
  • Add vermicelli to boiling milk and cook until it is soft.
  • Add raisins and nuts and makhan along with ghee .
  • Add mashed dates and stir well.
  • Add cardamom and stir till you get the fragrance.
  • Switch off the heat and add soaked dates along with milk.
  • You may garnish it with nuts.
