In summer, you can combine quinoa with some fresh summer vegetables and fruits to make wholesome, delicious recipes. Here are some summer recipes you can whip up with India Gate Quinoa.

QUINOA SALAD WITH RED ONION, BROCCOLI AND POMEGRANATE

Preparation time: 20 minutes

Cooking time: 10 minutes

Serves: 2

Ingredients

1 cup cooked quinoa (cook as per instructions on the packet)

Salt and pepper to taste

150 g broccoli, cut into bite-sized florets

1 red onion, chopped

1 cup pomegranate seeds

Olive oil

2-3 garlic cloves, minced

2 tsp red chilli flakes

tsp juice of lemon

Method

1. In a pan, heat 1 tbsp of olive oil. Add garlic and saut .

2. Add broccoli and cook till it is almost tender.

3. Add onion, pomegranate seeds and chilli flakes and stir.

4. Season with salt and pepper

5. Take off the flame and squeeze the juice of half a lemon.

6. Serve.

Burrito (1)

KIDNEY BEAN CARROT QUINOA BURRITO

Preparation time: 15 minutes

Cooking time: 10 minutes

Serves: 2

Ingredients

1 cup cooked quinoa

2 garlic cloves, minced

cup cooked kidney beans

Salt and pepper to taste

1 onion, diced

cup chopped carrot

A bunch of lettuce leaves

2 store-bought tortillas (you can even use rotis)

1 tbsp oil

Juice of half a lemon

1 tbsp cilantro leaves, chopped

Method

1. Heat oil in a pan and saut onion until it is cooked. Saut garlic.

2. Add the carrots and stir.

3. When the carrots are almost cooked add, salt, pepper, beans and quinoa and stir properly. Squeeze lemon juice, mix in lettuce leaves and spread cilantro leaves over the mixture. Keep aside.

4. Warm the tortillas over a hot pan with butter.

5. Divide the mixture into the two tortillas and roll them. Serve with a yoghurt dip of your choice.

BLUEBERRY BANANA QUINOA SMOOTHIE

Preparation time: 10 minutes

Cooking time: 15 minutes

Serves: 2

Ingredients

cup frozen blueberries

cup chopped frozen banana

cup cooked quinoa

1 cup milk

2 tbsp honey/maple syrup

Method

1. Whisk together blueberries, banana, quinoa, honey or maple syrup and milk in a blender.

2. Pour the smoothie in 2 glasses or mason jars and garnish with blueberries.

3. Serve.
