There s nothing that makes your day like a tasty and healthy breakfast. Don t frown upon hearing the word healthy because healthy can be tasty. All you need is a little experimenting and basic knowledge of flavours. As a mother or health conscious person, you already know sources of proteins, carbohydrates, fats and other nutrients. Combine these nutritious ingredients and grease a non stick pan with a few drops of oil and you are set to prepare these 5 easy and tasty breakfast recipes.

1. Whole wheat egg pizza

Chicken and paneer pizzas with the regular tomato base and loads of cheese are unhealthy boring. Try this egg pizza which does not need any fancy ingredients but still tastes divine.

Ingredients

  • 4 leftover or freshly made paranthas
  • 4 eggs
  • 1 tomato, finely chopped
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 4 tbsp grated cottage cheese
  • 1 tsp pepper powder
  • 1 tsp red chilli powder
  • Salt to taste
  • Finely chopped coriander for garnish

Method:

  • Heat the leftover paranthas and keep aside.
  • On a non stick pan, crack an egg like you would for a single fried egg recipe. With a spoon, fiddle with the yolk so that it mixes with the white partially.
  • Cook for 2 minutes on one side and do not flip.
  • Transfer the egg onto the parantha and move the parantha to the pan.
  • Now sprinkle all the chopped veggies, salt and seasonings on the egg and parantha.
  • Cook for 1-2 minutes until parantha gets crispy.
  • You can flip the parantha if you do not like your eggs partially cooked.
  • Transfer to the plate and sprinkle some paneer and coriander.
  • Cut into pieces with a pizza cutter and your pizza is ready.

2. Tricolor Cottage cheese delight

Don t wait for Independence Day or Republic Day to make this delectable and super easy sandwich. No cooking required just mix and fill.

Ingredients:

  • 6 slices multigrain bread
  • 1 cup grated cottage cheese or paneer
  • cup grated carrots
  • 2 tbsp capsicum, finely chopped
  • 2 tbsp onion, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • 1 green chilli, finely chopped
  • Salt and pepper to taste

Method:

  • Mix all the ingredients except bread in a bowl.
  • Fill the mixture in multigrain bread to make a sandwich and toast it in a toaster or on a nonstick pan. Serve with green chutney or ketchup.

3. Rajma and oats cutlets

Skip the standard veg cutlets for your Sunday breakfast and try this recipe. With a little planning and preparation on the previous night, you ll be able to dish out crispy cutlets in a jiffy in the morning.

Ingredients

  • 1 cup boiled rajma or kidney beans
  • cup oats, powdered
  • cup cornflakes, crushed
  • 1 small onion, finely chopped
  • 1 tsp ginger and garlic paste
  • 3 tbsp coriander leaves, finely chopped
  • 2 tbsp mint leaves, finely chopped
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • Salt as per taste
  • cup cornflakes, powdered for dusting on cutlets
  • Oil for shallow frying the cutlets

Method:

  • Mix all the ingredients except the oil and cornflakes powder for dusting. It is best mixed with dry fingers.
  • Make round and flat cutlets from this mixture and refrigerate them for 10-15 minutes. Refrigerating cutlets allows them to retain shape and absorb less oil.
  • Remove the cutlets and dust them with the cornflakes powder.
  • In a pan roast or shallow fry cutlets with little oil until both sides are crisp and brown.
  • Serve these with multigrain bread or you can also make a Frankie by rolling the cutlets in a roti or parantha.

4. Tofu masala scramble

Tofu is not a favourite for most people especially kids. Replace the standard egg scramble and paneer scramble with tofu and your family won t even realize what s on their plate because it is so tasty.

  • 1 cup tofu, mashed roughly with a fork
  • cup bell peppers, chopped
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • cup grated carrot and cabbage
  • 2 tbsp spinach, finely chopped
  • tsp turmeric powder
  • tsp chili powder
  • 2 tbsp coriander, chopped
  • Salt to taste
  • 1 tsp olive oil

Method:

  • Heat the oil in a pan. Add the chopped onion and stir till the sweat.
  • Add the tomatoes, bell peppers, spinach, grated carrots and cabbage along with turmeric, chili powder and salt and saut for 2-3 minutes.
  • Add the tofu and chopped coriander leaves and mix well.
  • Allow the tofu to cook for 3-5 minutes. If the tofu starts drying out, add a tbsp of water.
  • Serve hot with toast.

5. Egg Uttapam

It is an uttapam that doesn t require any fermenting or pre-preparations. Skip the trouble of serving egg and toast and just put them all in a bowl to make soft and mushy uttapams that have a cheesy taste without even a strand of cheese.

Ingredients

  • 8-10 slices of bread
  • 1 egg
  • cup milk
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • cup capsicum, finely chopped
  • 1 green chili, finely chopped
  • 1 tbsp coriander, finely chopped
  • 1 tsp chili powder
  • Salt to taste

Method:

  • Beat the egg well in a small bowl along with the milk.
  • Break the bread in medium sized pieces in a bowl. To this, add the egg and milk mix and all other ingredients.
  • Mix well to form a thick batter. If the mixture is too dry, you can add some milk. If the egg used was too small, you may need to add one more egg.
  • Allow this mix to stay for 4-5 minutes.
  • Heat a nonstick pan and pour two ladles of the mix on it. Spread it like an uttapam and cover it.
  • Allow it to cook for 2-3 minutes on each side, till golden brown
  • Serve with ketchup.
