World Vegan Month: Spicy falafel recipe

Vegan or not, experimenting with food helps you change the way you eat and feel about food. Here is an easy vegan recipe to try and experiment this World Vegan Month.

This recipe with chickpea and spices is both tasty and nutritious. Chickpeas are high in dietary fibre, vitamins and minerals and low in fat. Eating chickpea regularly will help you manage your weight and help keep your digestive tract healthy.

Ingredients

  • Boiled chickpeas- 500 gms
  • Pita bread- 2
  • Chopped onion- 1
  • Chopped tomato- 1
  • Ginger garlic paste- 1 tsp
  • Ground cumin seeds- 1 tsp
  • Black pepper and salt- to taste
  • Chopped fresh parsley- 2 sticks
  • Oil to fry

Method

  • In a large mixing bowl, mash the chickpeas, add the ginger garlic paste, cumin seeds, chopped parsley, black pepper and salt. Mix thoroughly and make 4 patty out of the mixture.
  • In a frying pan, add oil and shallow fry the patty till golden brown and keep aside.
  • In the same frying pan, toast the pita bread for about 2-3 mins
  • Make a pocket with the pita bread, add fresh onions, tomatoes, parsley, lettuce leaves and place two patty in the pocket.

Your healthy falafels are ready to serve
