Miso is a traditional Japanese seasoning, slowly gaining popularity in Western countries. It is made by fermenting soybeans with salt and also a fungus called Aspergillus oryzae. It is also made by adding rice or barley and is of different types, depending on the ingredients used in making it. The process of fermentation turns it into a butter-like fine paste which is added to make soups and broths.
Miso is very healthy as it is full of goodness from soybean, rice, barley, wheat, rye, millet, etc. It has various health benefits like:
Miso has a high salt content and excessive consumption may worsen hypertension in some patients. Although, there are claims that the high salt content of miso does not have any harmful effects but there's no scientific evidence validating the claim.
Miso is easily available in the market and is an ideal ingredient for soups and broths. Try this healthy vegetable miso soup recipe:

Saute all the vegetables in a pan with some sesame oil. Add the vegetable stock and tofu and bring to boil, simmer for 5-10 minutes. Add miso and stir well to dissolve it completely. Cook for another 8-10 minutes. Serve hot! Miso soup is traditionally made with seaweed and shiitake mushrooms, but seaweed is not easily available in India and hence it can be skipped to suit our needs. Shiitake mushrooms have various health benefits, but they can also be replaced with button mushrooms and in case you don't like tofu, you can use paneer.
This recipe takes not more than 20 minutes to make and is ideal for cold winter evenings.
