Vegetable sev puri recipe (minus the puris!)

Try this healthier version of your favourite chaat.

vegetable sev puriThe Indian palate is quite used to strong flavours which can be seen in our street fare that consists of various types of chaats. These are a mishmash of sweet, spicy, salty, sour tastes — all blending effortlessly with each other to create a rhapsody that tingles our taste buds. But people on a diet often have to skip these street foods. Many also avoid it due to the hygiene factor at these stalls. Nutritionist Naini Setalvad doles out a healthy version of the much-loved sev puri which everyone can enjoy. Make this dish as a snack and don’t miss out on those yummy flavours.

Ingredients

2 large tomatoes

2 cucumbers

1 ½ potatoes, boiled

1 onion

3 tbsp sweet khajoor chutney

2 tbsp green chili chutney

2 tsp jeera powder

Salt to taste

Method

Cut cucumber, tomato and potato into thick slices.

Finely chop the onions.

Place the tomato slices in a plate and then put the cucumber slice over it.

A potato slice over the tomato and cucumber slice.

Sprinkle salt and jeera powder over the placed tomato, cucumber and potato slices.

Spread sweet chutney and then green chutney over it.

Sprinkle a lot of coriander and onions over it and serve.

This recipe is healthy as it uses only vegetables and some spices for taste. It does not have the fried puri. If you find salads boring, eat them in this form. It makes for a healthy snack, packed with nutrients which these veggies offer. Though it is called sev puri, it does not have either of them to make it more nutritious. But it does taste like the real thing and is healthier too.
