Traditional risotto is chewy, gooey and spells high calorie. With the base ingredient being cheese, it can t be healthy obviously. But just a few switches here and there can help you achieve almost the same taste and consistency and you can enjoy the dish guilt-free. Here is a healthy brown rice risotto which has no oil and is good for heart health. Only 2 teaspoons of cheese makes it low calorie and while Arborio rice has some health benefits, brown rice definitely holds the top position. Ingredients
2 cups brown rice, cooked
cup onions, finely chopped
2 tsp garlic, finely chopped
cup capsicum (red, yellow and green), finely chopped
Place a non-stick pan on the flame and add the garlic and onions once it is hot. It is a no oil recipe. Hence, you need to dry roast the ingredients.
Once onions are brown, add the capsicum and stir for another 1 minute. You can add a little water if the ingredients start burning.
Now add the brown rice and stir for 2-3 minutes. Let them cook on medium flame. Add the remaining ingredients along with the cornflour and milk mixture and stir well.
Cook for 2-3 minutes. Using a vegetable masher, mash the rice roughly to give it the consistency of a risotto.
Add 1 tbsp of water to make the mix little soggy and mix well.
Add the cheese and mix. Cook for another minute and serve immediately.
