The recipe uses hung curd and just a few more ingredients to make a fresh and light dip which can be enjoyed with nachos, cream crackers, tacos or even toasties. Here s a quick recipe:
Take plain curd in a muslin cloth or very fine sieve and put the plain curd in the refrigerator overnight so that all the extra water drains off. In the morning, separate the whey and curd.
In a big bowl take the hung curd which is now thick and creamy and stir it well.
Add to it the finely chopped cucumber, parsley, olives, and other ingredients and mix well.
Chill the dip and serve with croutons, tacos, baked chips, nachos or toasties.
You can even sprinkle some chili flakes or paprika if you want it spicy. Grated carrots are also a great addition.
