Thinking of new ways to whip up delicious healthy meals every day can be a challenge. Many of us resort to eating out or in our canteens, munching on packaged food, microwaving ready-to-eat meals or worse, skipping meals and staying hungry. Owing to time constraints, lack of inspiration or sometimes sheer laziness, cooking meals at home is often reserved for weekends. Ask any nutritionist or health expert, and you will understand why that is a bad idea. Home-cooked food tends to be healthier because it contains less oil, preservatives, colours, additives and salt. To help you out with a healthy three-course meal, we have got the executive chef of Hyatt Regency Mumbai, Gopi Nandakumar, to share with us his signature recipe, citrus quinoa with grilled artichoke.
This recipe has goodness of superfood and super filling quinoa and is packed with citrus flavours derived from fresh lemon and organge. Pair this with a side of grilled artichoke and you get a restaurant-style meal that will have your guests praise you for days!
Ingredients:
Quinoa 50gms
Orange segment 15gms
Asparagus 10gm
Fresh fennel 5gm
Cherry tomato 10gm
Orange juice 3tbsp
Lemon 1tbsp
Olive oil tbsp.
Artichoke 20gm
Salt to taste
Pepper to taste
Method:
Cook the quinoa in hot water with olive oil and salt.
Strain it and check the consistency. Ensure it is not mashed and leave it to cool.
Ina a bowl, mix 1tbsp of lemon juice, 3tbsp of orange juice and tbsp of olive oil until it emulsifies.
Arrange all the other ingredients - shaved fennel, orange segment, blanched asparagus, grilled artichoke and cherry tomato on the plate.
In a griddle, heat olive oil and grill the artichoke until you get the grilled marks on it. Season lightly with salt and pepper.
Place the quinoa next to the other ingredients on the plate and garnish it with grilled artichoke. Serve hot.
