Try this satisfying chicken salad for dinner

Including salads in your regular meals is one of the simplest ways to stay fit! But are you sick and tired of the same old vegetable salad? You can eat a healthy bowl of salad as a side or main meal. Here is a fun chicken salad for your weekend dinner or your next party starter. This chicken salad brims with delicious fruits, while the curry powder and the pudina chutney add a bunch of seasoning to take this salad to the next level. The low-fat yoghurt and the minimal added ingredients will ensure that you do not nib in a few extra calories. Rich in nutrients, this salad will be a guaranteed treat to your taste buds. You can also add a few more fruits and vegetables of your choice to this salad to make it healthier.

Makes for six servings

Ingredients:

  • cup cooked boneless chicken breast (cubes)
  • cup raisins
  • 1 cup seedless grapes
  • 1 large apple (cubes)
  • 1 and cups celery (diagonally sliced)
  • 2 green onions (sliced)
  • A handful of loose lettuce leaves
  • cup unsalted peanuts (chopped coarsely)
  • cup low-fat yoghurt
  • cup pudina chutney
  • tsp curry powder

Method:

  • Combine chicken, raisins, grapes, apples, celery and green onions in a large bowl.
  • In another small bowl, combine the yoghurt, pudina chutney and curry powder to prepare the dressing.
  • Now pour the dressing over the chicken mixture and toss well so that it coats evenly. For the flavours to blend, cover and refrigerate the mixture in the refrigerator for one hour.
  • Then serve the salad on lettuce leaves and garnish with peanuts.
  • Refrigerate for another one hour before serving.
