Try this light yet filling brown rice khichdi for dinner

This dish can be a perfect choice for your lunch and dinner.

You know that brown rice is healthier than white rice. Brown rice is rich in fibre and thus has a low glycemic index. It is also incredibly rich in vitamins and minerals and thus more nutritionally beneficial than white rice. However, many of us still prefer white rice because brown rice is boring. Here is a recipe by nutritionist Urvashi Sawhney that will give you the flavour you want in brown rice.

All you need to do is to add a little time to your cooking pot to prepare this delicious brown rice recipe. Prepared with split moong dal, it can keep you satiated and full for a longer time. With only two tablespoons ghee, this hearty dish is not only low in cholesterol but also calories. This dish can be a perfect choice for your lunch and dinner.   • 1 cup split moong dal
  • 2 cups brown rice
  • 1-inch fresh ginger root
  • Handful of cilantro leaves
  • tablespoon turmeric
  • 2 tablespoons ghee
  • One tablespoon whole cumin seeds
  • tablespoon coriander powder
  • tablespoon mustard seeds
  • tablespoon rock salt
  • A pinch of asafoetida or hing
  • 5-7 cups water


  • Wash the lentil and rice together until the water runs clear.
  • Then heat a saucepan over medium heat and add ghee, mustard seeds, turmeric powder, whole cumin seeds, hing and coriander powder.
  • Stir all the ingredients together for a few minutes and then add rice, dal and stir again.
  • Then add salt and water and bring the mixture to boil.
  • Cook for 10 minutes and then turn the heat to low and continue cooking till both the rice and dal becomes soft.
  • You can add the cilantro leaves before serving.
