Quinoa can be an amazing protein-rich substitute for rice. Not only this, quinoa is an excellent source of fibre which means it can provide energy, relieve constipation, lower cholesterol levels and prevent diabetes. It is also a rich source of iron, manganese, magnesium and riboflavin. There are a number of ways you can add quinoa in your diet. However, if you think quinoa does not taste great, we bring you a super delicious and easy preparation of quinoa that takes less than 10 minutes. The soy sauce and ginger garlic paste merge beautifully with bell peppers and spring onion. It can be perfect as a satisfying lunch and can also be a great dinner option.

Ingredients

  • Quinoa - 1 cup
  • Water - 3 cups
  • Salt a pinch
  • Olive oil 1 tbsp
  • Ginger-garlic paste 1 tbsp
  • Green chili (finely cut) 1 tsp
  • Soya sauce 1 tsp
  • Pepper sauce - 1 tsp
  • Spring onions cup
  • Capsicum - cup
  • Chicken (cooked and shredded) 1 cup
  • Salt to taste

  • Boil water with a pinch of salt.
  • Add the quinoa.
  • Reduce heat and cook for about 15 minutes cook till the quinoa is tender.
  • Put it in a strainer and drain out the water.
  • Heat olive oil over medium heat.
  • Add ginger-garlic paste and saut .
  • Add the chilies, soy sauce, pepper sauce and salt.
  • Mix well.
  • Add the spring onions and capsicum and saut till they soften a bit.
  • Then add chicken and saut for a minute.
  • Add quinoa and mix well
  • Serve hot.
