Summer special: Jackfruit idly

This jackfruit idli is rich in fibre and vitamin A that can keep you in good health.

Give a twist to your regular idlis by preparing them with jackfruit this summer. Jackfruit contains a good amount of carbohydrate that can boost your energy levels. It is also a rich source of fibre that can regulate your bowel movements. Plus, it is a good source of vitamin A which is a vital nutrient for eye health.

Ingredients

  • Daliya or lapsi (finest variety) 1 cup
  • Sweet Jackfruit bulbs 2500 gm
  • Curd 2 tbsp
  • Powdered jaggery cup (can add lesser to make it less sweet)
  • Salt a pinch
  • Baking soda 1 tsp

Method

  • Deseed the jackfruit bulbs.
  • Take it in a food chopper and crush it finely.
  • Mix it with the rest of the ingredients, except soda.
  • Add water to get idly batter consistency.
  • Add soda and mix well.
  • Grease idly containers and steam for 10 to 12 minutes.
  • Serve warm.
