Lord Rama s birthday is observed as Ram Navami in many parts of India and like every Indian festival, sweets are an indispensable part of this one too. From laddoos to kheer, the aroma of ghee-laden sweet delights fills the kitchen on this festive day. While you may choose to stay away from the sweet treats because they are calorie dense, here s is a low-calorie jackfruit kheer which you can relish guilt-free. The coconut milk and jackfruit gives this kheer a healthy twist. While coconut milk helps boost your metabolism and keeps your weight in check, jackfruit is rich in carbohydrates and provides you with instant energy. Rich in vitamin C, ingesting jackfruit can be an excellent way to boost your immunity. Jackfruits are fairly rich in dietary fibre and have high water content, which helps in relieving constipation and aids in the smooth running of the digestive system. Here s how you can prepare the sweet treat.

Ingredients

  • Jackfruit pulp (fresh) 1/3 cup
  • Skim milk cup
  • Coconut milk cup
  • Ghee 1 tsp
  • Jaggery 1 tbsp
  • Cardamom powder tsp
  • Cashewnut pieces 1 tbsp
  • Raisins 1 tsp

Method

  • Heat ghee in a pan.
  • Add jackfruit pulp and saut for a minute on low flame.
  • Add milk and mix well.
  • Cook for five minutes on slow flame.
  • Add coconut milk and jaggery.
  • Mix and cook on slow for a minute.
  • Add cardamom powder, cashew nuts and raisins.
  • Cover the lid and let it cool.
  • Serve chilled.
