Quick and healthy recipe: Cucumber and peanut raita

Cucumber is great for summer and what tastier way to enjoy it than make this delicious raita!

Cucumber is known to be excellent to beat the heat. It has a high water content and helps in maintaining the fluid and electrolyte balance in the body. It not only helps in keeping you hydrated but also helps in boosting digestion. It prevents acidity, constipation and are also known flush out toxins from the body acting like a good detox food. They are extremely beneficial in weight loss as it is low in calories and rich in fibre. Since it are rich in fibre, it prevents hunger pangs and keeps you full for a long time.

And, the simplest way to do that is to make a quick cucumber raita. This recipe is simple and easy to make and remember to make it just before you are about to start your lunch or dinner, as cucumber is watery and your raita will become very runny.

  • 2 cucumbers, peeled, diced or grated
  • 1 green chilli, finely chopped
  • A handful of peanuts, coarsely crushed
  • A few sprigs of coriander, finely chopped
  • 1/2 cup curd
  • Salt, black pepper powder and sugar to taste

Method

Mix the diced cucumber, chopped green chillies, coriander, salt and sugar in a bowl. Now, add the curd, crushed peanuts and pepper powder. Mix well. Serve immediately.

You can make the recipe more interesting by adding more vegetables to it. Toss in a chopped onion, or fresh bell peppers. Use mint leaves instead of coriander to make the raita more fresh. You can also replace onions and other vegetables with fresh fruits such as grapes and pomegranate seeds. When you are adding fruits instead of vegetables, replace the peanuts with toasted pumpkin seeds!
