Parsi brown rice– A delicacy you must try!

There is nothing quite like an authentic Navroz meal. The feast starts at breakfast when sweet sev or vermicelli is served at breakfast. Boxes of mawa ni boi (mawa sweets moulded into fish) are sent around to friends and neighbours. And no matter what, the dhansak dal is always served for lunch; it is a legacy of Irani roots. Nutritionist Urvashi Sawhney shares a Parsi brown rice recipe which you can eat in combination with dhansak dal. Here s how you can prepare the mouthwatering delicacy.   • 2 cups basmati rice
  • 1 tablespoon sugar
  • 1 tablespoon ghee
  • 6 cloves
  • 4 one-inch cinnamon sticks
  • 3-4 cardamom green
  • 1-2 star anise
  • 2 bay leaf
  • 4 cups of water
  • 1 and a half teaspoons salt

Method of preparation:

  • Wash the basmati rice 3-4 rice before you drain thoroughly. Keep the rice aside.
  • Heat the ghee in a heavy bottomed pan. Once hot add the cloves, cinnamon stick, cardamom and star anise except for the bay leaf. Stir for 30-40 seconds until the spices release aroma.
  • Then add the bay leaves and stir for a few seconds more.
  • Keep the flame in medium, and then stir in the sugar. Keep stirring the sugar till it turns from light golden to dark amber. However, make sure that the sugar is not burnt.
  • Then add the drained basmati rice and stir for 2-3 minutes.
  • Then add the water and allow it to come to a boil. Add salt, and stir before you cover the pan with a lid.
  • Let the rice cook in medium flame for about 9 to 10 minutes. Make sure that you do not open the lid once you turn off the heat as the rice will continue to cook in steam.
  • Open the lid after 15 minutes and serve it with your favourite dhansak dal. Find the recipe of dhansak dal here. Also, try Parsi new year special– ravo recipe.
