No-oil recipe: Garlicky cabbage and spinach salad

Watching your weight? Then you are obviously including salads in your diet. However, not all salads are healthy. There are certain salads that will help you lose weight while some salads might sabotage your weightloss goals. The garlicky cabbage and spinach salad by Chef Tarla Dalal is rich in fibre, Vitamin A and C. The contrasting colours in this beautiful salad, make it a great addition to a healthy party menu too. The walnuts and cabbage add a crunch which goes perfectly with the acidity of lemon, sweetness of the carrots and slight bitterness of the spinach. All you need to do is chop and mix and your salad is ready to serve in under 15 minutes. You can also try these healthy salad dressings.

Ingredients

  • cup red cabbage, shredded
  • cup regular cabbage, shredded
  • cup spinach, shredded
  • cup carrots, thickly grated
  • 2 tbsp walnuts, chopped
  • 1 tbsp garlic, finely chopped
  • 2 tsp lemon juice
  • tsp mustard powder
  • Salt and pepper to taste

  1. In a small bowl, mix garlic, mustard powder, salt, pepper and lemon juice to prepare the dressing. Adjust the lemon juice to make a runny dressing such that it coats all the salad ingredients well.
  2. In a big salad mixing bowl, add the shredded cabbage, spinach and carrot and mix well. Add the walnuts and mix in the dressing and toss the salad gently. Serve immediately or store in refrigerator till meal time.
