Navratri healthy recipe: Aloo pulao with samvat rice

aloo pulaoNavratri is a time when fasting is observed in most parts of the country. Certain foods like sabudana (sago), potatoes, fruits and peanuts are preferred when one breaks the fast.

The aloo pulao, made with samvat rice is a popular dish at this time of the year. Potatoes are saut ed with cinnamon, dry ginger, turmeric and other spices and then pressure-cooked with rice for a tasty dinner.

Preparation Time: 10 mins

Cooking Time: 20 mins

Serves 4

Ingredients

Samvat rice 1 1/2 cups

Potato cubes 1 cup

Bay leaves (tejpatta) 2

Cloves (laung / lavang) 5 to 6

Cinnamon (dalchini) 1inch

Tomatoes (finely chopped) 1 medium size (optional)

Turmeric powder (haldi)2 tsp

Dried ginger powder (soonth)1/4 tsp

Chilli powder 1 tsp

Garam masala 1 tsp

Oil 2 tbsp

Salt to taste

For the garnish

Few mint sprigs

Method

  • Wash and soak the rice for 15 - 20 minutes. Drain. Keep aside.
  • Heat the oil in a pressure cooker. Add bay leaves, cloves and cinnamon.
  • When they crackle, add the turmeric powder, chilli powder,dry ginger powder, garam masala, tomatoes and potatoes .Saut for 2 minutes
  • Add the rice. Saut for 2 more minutes, add 3 cups of hot water and salt and pressure cook for 1 whistle.
  • Garnish with the mint springs. Serve hot
