Winters demand comfort food and what better than a bowl of khichado. This is similar to a khichdi, sans the rice, and a traditional delicacy during Uttarayan or Makar Sankranti in Gujarat. This multigrain version of the khichdo is a one pot meal, packed with nutrients that can keep you full all day without compromising on taste. Since it is heavy to digest, it is best had during lunch hours. Ingredients like cumin seeds and spices are added to aid digestion.

Method
1. Heat oil in a pan.
2. Now, put cinnamon sticks, cloves, cumin seeds and ginger paste in the pan to saut .
3. After this, add chopped green chillies in the pan and saut them.
4. Next, add whole sorghum and whole pearl mill in it to saut .
5. Now, put black-eyed peas, red capsicum and carrot in the pan to saut .
6. After the vegetables are slightly cooked, mix salt and peas in it. After this, add water in the pan to cook for 15 mins.
7. Next, mix the sprouted green gram in the pan to cook.
8. Meanwhile, mix wheat flour and water in a bowl to prepare a paste and mix it in the khichado to cook for 3-4 mins.
9. Garnish the prepared khichado with chopped carrot, chopped red capsicum, sprouted green gram, peas, black-eyed peas, cloves, chopped green chillies and sesame oil.
Your Khichado is ready.
