The bhogichi bhaji is a Maharashtrian traditional delicacy that you will find in most homes during the festival of Makar Sankranti. This mixed vegetable recipe is considered as an offering to the harvest season that begins post the festival. Sankranti, pongal, uttarayan, lohri are just different names given to the same festival celebrated across the country.
Using fava beans, a good source of dietary fibre (as per USDA), and other vegetables, makes it a wholesome, nutritious meal when enjoyed along with bhakri or chapattis. Watch the video for the recipe of Bhogichi Bhaji by Chef Sanjeev Kapoor and try this delicacy today.

Method
1. Heat oil in a non-stick pan. Add mustard seeds and let them crackle.
2. Add turmeric powder, asafoetida and onions. Mix and saut for 1-2 minutes.
3. Add fava beans and mix. Add 1 cup water, stir, cover and cook for 10-12 minutes.
4. Add carrot and green peas, mix well, cover and cook for 2-3 minutes. Add brinjal and mix well.
5. Add garam masala powder, red chilli powder, salt to taste, mix well, cover and cook for 5-7 minutes.
6. Garnish with grated coconut, tamarind paste and coriander leaves.
