Mahashivratri recipe: Rajgira or Amaranth Kadhi

This high protein kadhi is delicious and perfect for celebrating Mahashivratri.

Most people observe a fast on the day of Mahashivratri. Restaurants serve special ‘vrat ka khana’ or food that can be eaten when observing a fast. Everything from rotis, rice, main course vegetables and desserts are made from a set of ingredients that are not common to everyday cooking. The rajgira added in this recipe is a good source of protein and the kadhi tastes delicious with varai or the Indian barnyard millet rice.   • 1 cup yogurt, whisked
  • 2 tbsp clarified butter or ghee
  • 7-8 curry leaves
  • 3-4 cloves
  • 1 tsp cumin seeds
  • 1 tsp sugar
  • 1 tsp ginger chilli paste
  • 2 tbsp rajgira flour
  • Coriander for garnish

  • Combine a of cup whisked yogurt or dahi and 2 tablespoons of rajgira or amaranth flour in a bowl. Whisk well to avoid lumps.
  • Add salt, sugar, ginger chilli paste and mix well.
  • Now add 1 cup water and whisk well.
  • In a deep non-stick pan, add the ghee and heat it.
  • Now add the cumin and cloves and allow them to crackle.
  • Add curry leaves and sauté.
  • Add the yogurt mixture and whisk quickly to avoid any lumps.
  • Allow the kadhi to boil for 5-7 minutes till the rajgira flour is cooked properly with the yogurt.
  • Garnish it with some coriander and serve it hot with Varai rice or ragi bhakri.

You can also add roasted peanut powder to yogurt mix in case you don’t have rajgira flour.
