Holi recipe -- sugar-free kesari malai peda (by Chef Sanjeev Kapoor)

Make the healthy version of the delicious kesari malai peda.

Kesar Malai Peda

Malai peda is a favourite delicacy of many but it can be quite rich in calories. Make its sugar-free version and enjoy it on Holi. The addition of saffron and cardamom powder gives it a beautiful aroma making it an irresistible treat. Chef Sanjeev Kapoor shares this recipe with us.

Ingredients:
4 cups milk

A few strands of saffron

A pinch of citric acid

2 teaspoons cornflour, dissolved in 2 tablespoons of milk

teaspoon green cardamom powder

10 teaspoons artificial sweetener

8 almonds, chopped

Method

  1. Bring milk to a boil in a deep pan and simmer till it reduces to half its original quantity. Add saffron and mix well.
  2. Mix citric acid in two teaspoons of water and add to the thickened milk.
  3. Add dissolved cornflour and stir continuously till the mixture thickens.
  4. Add green cardamom powder and mix well.
  5. Take pan off the heat and stir in Sugar Free Natura Diet Sugar and set aside to cool.
  6. Divide the mixture into eight equal portions and shape them into round pedas.
  7. Sprinkle almonds over the pedas and serve.
