High protein healthy vegetarian dinner recipe – Soya bhurji

Vegetarians have to rely on various sources of protein to fulfil their daily protein requirement. Know more about how you can increase protein in Indian food here. Soya granules or nuggets pack a high amount of protein in them and hence are a perfect recipe for weight loss. Most of the soya preparations are so delicious that you can enjoy them without any carbs or accompaniments. Here s the recipe of the lipsmacking Mumbai-style soya Bhurji which is low fat, high protein and mouthwatering. Also Read - Why you should not take whey protein at night?

Ingredients:

  • 1 cup soya chunks, cooked
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 green chilli, finely chopped
  • 1 tsp red chilli powder
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp oil
  • Salt to taste

Method:

  1. Heat oil is a wok or cast iron pan. When the pan is very hot add the green chillies, onions and tomatoes.
  2. Stir them for a minute.
  3. Add the turmeric, garam masala and red chilli powder along with the salt and saut for 2-3 minutes.
  4. Add a few spoons of water if the masala starts sticking to the base of the pan.
  5. Finely chop the soaked soya chunks and add them to the pan.
  6. Stir and sprinkle 3-4 tbsp of water
  7. Cover and cook for 2-3 minutes.
  8. The soya bhurji is ready.

You can serve it with rotis, bhakri, ragi roti or enjoy it as is, It can also be stuffed in multigrain bread and enjoyed as a sandwich. Though soya nuggets are one of the richest vegetarian sources of protein, you will need to include other protein foods in your diet too.
