Healthy winter recipe for kids — Carrot and orange soup

इन्संट सूप्स – सूप्स हा आरोग्यदायी पदार्थ आहे. वजन कमी करण्याच्या मिशनवर असणार्यां ना सुप्स फारच फायदेशीर आहे. मात्र आजकाल बाजारात उपलब्ध असलेली इन्स्टंट सूप्सच्या पाकिटांमध्ये साखर अधिक प्रमाणात असते. टोमॅटो सूप्सच्या एका (126 ग्रॅम) पाकिटात 13 ग्रॅम साखर असते.

If your child is too fussy about eating vegetables, you can add them to a soup and make sure he gets his required dose of nutrition. This soup consists of carrot, orange and several other healthy ingredients which your child may not eat otherwise but this yummy soup will do the trick.   • 1 tablespoon vegetable oil
  • 2 leeks, thinly sliced
  • 6 large carrots, sliced
  • 2 tablespoon curry powder
  • 1 tablespoon finely grated  lemon rind
  • 1 cup /250 ml orange juice
  • 1 ½ cups/375 ml coconut milk
  • 2 cups/500 ml vegetable stock
  • Freshly ground black pepper
  • 1/3 cup /60g natural yoghurt
  • 100g cashew nuts, roasted and chopped
  • 1 tablespoon chopped fresh mint

  • Heat oil in a large saucepan. Add leeks and cook over medium flame, stirring for 5 minutes or until golden.
  • Add carrots, curry powder, lemon rind and orange juice to pan, bring to the boil and simmer for 10 minutes or until carrots are soft.
  • Stir in coconut milk and stock and simmer for 10 minutes.
  • Remove pan from heat and set aside to cool slightly. Place soup mixture in a food processor or blender and process until smooth.
  • Return soup to a clean saucepan and heat over a medium heat, stirring for 4-5 minutes or until hot. Season to taste with black pepper. Serve soup topped with yoghurt, cashew. Serve soup topped with black pepper. Serve soup topped with yoghurt cashew nuts and mint.
