Manga pachadi is one of my favourite mango recipes and being a South Indian; you have the privilege of enjoying manga pachadi at most occasions and festivals. Chef Preetha Srinivasan shares this delicious recipe that you must try and share with your friends. It is an excellent source of Vitamins, has antioxidant properties and also aids digestion.
3 to 4 dried red chillies or medium spicy green chillies
1/3 cup jaggery, crushed
tsp mustard seeds

1/4 cup tamarind water
Salt to taste
Pinch of turmeric
Pinch of Asafoetida/Hing
1 tbsp Oil
1 tbsp ghee
1 1/2 tbsp fresh or dried neem flowers
Water as required
Method
In a kadhai or pan, heat ghee and add dried neem flowers. Saut till it is mildly crisp, turn off the flame and keep aside
In the same pan, heat oil for tadka using mustard and chillies. Once the mustards crackle, add hing and diced mangoes. Saut them for a while
Once translucent, pop in some turmeric, salt as per your requirement and some water. Cover the pan with a lid and cook till mangoes soften into a gooey jam consistency
Add tamarind water and simmer for 5 minutes. Then, add jaggery and simmer till the sweet and sour flavours blend
Now you toss in the fried neem flowers and mix it well. Simmer for a minute and it's ready to serve
You can have it with your meals as a side dish or have it after your meal. Happy Vishu everyone!
