Veganism is a way of life without animal exploitation. Vegans eat no animal products no meat, fish, chicken, eggs, milk or even honey. Here is a tasty vegan recipe of carrot cake that you can try.
Ingredients
For the Frosting
1. Cashews - 1/2 cup
2. Icing Sugar cup
3. Vanilla essence 1 tsp
Method
1. Soak flax seeds overnight and grind to form a smooth paste with minimum water (9 Tbsp water)
2. Peel carrots and slice them into medium sized pieces and microwave for 5-7 min
3. Grind them and make a puree and keep aside
4. Sift flour, baking powder and salt for 3-4 times and then add sugar.
5. In a separate bowl mix oil, flaxseed paste, vanilla essence, maple syrup. Mix very well till it all blends together.
6. Mix this to the above flour mixture. Mix well
7. Fold in carrot puree and coconut. Combine well and beat for some time.
8. Add walnuts and mix gently.
9. Pour the cake mixture into a greased dish and bake for 180'C for 40-45 min. Keep checking your cake once it gives you a good fragrance.
10. For the frosting grind soaked cashews till creamy and whip with icing sugar and vanilla essence.
11. Dress the cake and keep refrigerated for 3 to 4 hrs.

Flax seeds which are usually used to replace eggs in vegan baking are an excellent source of Omega-3 fatty acids. Vegan desserts are also cholesterol free and are a healthy option to their calories laden non-vegan versions. Dairy-free desserts are also good as a majority of Indians are lactose intolerant.
