A favourite snack of most Mumbaikars, the vada pav is surely an epic Indian dish. But the health-conscious brigade might question its nutrition quotient and so we give you its healthier version.
This recipe replaces the refined flour bread with a whole wheat pita and omits frying the vada altogether making it guilt-free. The salad and chutney add fibre, crunch and flavour to this delicious snack.

Makes 8 vada pav
Ingredients
8 whole wheat (gehun) burger buns
For The Garlic Chutney
1/4 cup garlic (lehsun) cloves
1 tbsp chilli powder
1 tsp coriander-cumin seeds (dhania-jeera) powder
salt to taste
For The Vada Filling
3 cups boiled and mashed potatoes
3 to 4 green chillies , chopped
1 tsp ginger (adrak)
1 1/2 tsp chopped garlic (lehsun)
1 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)
6 to 8 curry leaves (kadi patta)
1/4 tsp turmeric powder (haldi)
salt to taste
For The Outer Covering
3/4 cup bengal gram flour
1/4 tsp turmeric powder (haldi)
1/4 tsp chilli powder
1 tsp oil
salt to taste
Other Ingredients
8 tomatoes slices
1 cup shredded lettuce
8 sliced onions
