Healthy spinach and paneer soup recipe

This spinach and paneer soup can be a quick, hot meal providing you with plenty of nutrients. Spinach or palak is rich in fibre, folic acid and iron whereas paneer or cottage cheese can load you up with protein. Consuming spinach can also be one of the best ways to get a healthy range of antioxidants. The onion and black pepper add a wonderful, rich texture to this spinach-based soup making it very appealing to the palate. You can also try this healthy vegetable miso soup.

Ingredients

  • 1 bunch spinach leaves
  • 1 tsp olive oil
  • 4-5 black peppercorns
  • teaspoon jeera
  • 1 medium-size onion
  • 1 piece ginger
  • 3 garlic cloves
  • 100g paneer
  • 1 tbsp lemon juice
  • Salt to taste

  • Blanch the spinach leaves in hot water.
  • Drain and immerse them in cold water.
  • Now heat the oil in a pan.
  • Add cumin seeds and peppercorns.
  • Fry till they start to change colour.
  • Add the onions and saut .
  • Add ginger and garlic and saut till they turn golden.
  • Puree the spinach leaves with 1 cup water.
  • Add it to the pan.
  • You may add more water to get a soup like consistency.
  • Now add salt and lemon juice.
  • Add paneer cubes.
  • Serve hot.
