Apple and pumpkin is a unique combination but makes for a great-tasting soup. Both the key ingredients have multiple health benefits. Not only do apples give you glowing skin, they also help fight cancer, prevent the risk of a stroke, help in weight loss and also improve memory. Pumpkin on the other hand, is rich in vitamin A and antioxidants, dietary fibre and extremely low in calories. This soup is excellent for someone on a weight loss programme, add little or no cheese.
On a pan heat olive oil; add chopped garlic, chopped ginger, chopped onion, red chilli powder, turmeric powder, coriander powder, salt, crushed black pepper, chopped apple, chopped pumpkin, water and cover the pan and cook for 5 to 7 minutes.
Remove the pan lid and keep aside some mixture for the garnish.
Add water to the pan mixture and blend it. Then sieve it further.
Boil the sieved soup and add oatmeal to it and let it cook further.
Add chopped celery and parmesan cheese.
Remove the soup in a bowl.
Add cheese and crushed black pepper to the saved pan mixture.
Fill this mixture in a ring mould and prepare a timble. Keep this in a soup bowl.
