Healthy snacks - Ragi nachos recipe with healthy cream sauce

Nachos have become the new generation French fries. Anyone you see at a caf or a restaurant, has a plate full of loaded nachos on their table. It started with the simple nachos and salsa which was a relatively healthy option provided the nachos are baked and not fried. But then came in the loaded nachos that have a blend of healthy beans, olives, salad topped with high-calorie sour cream and cheese. You can t deny that these make an easy party snack or appetizer and are addictive. You can t just have one. You can also try these healthy snack recipes.

This is why we share with you a recipe of healthy nachos that are made from nachni flour, baked and are loaded with a creamy sauce but do not contain any kind of cheese or cream. Here s Chef Saransh Goila s recipe of healthy nachos with a cream spinach topping:

Ingredients:

  • 1 cup nachni flour
  • cup flour
  • 1 cup water, lukewarm
  • 1 tbsp oil
  • 1 tsp salt
  • 1 cup toned milk
  • 1 tbsp wheat flour
  • 2 tbsp palak puree
  • 1 tsp mixed herbs
  • 1 tsp pepper powder
  • tsp nutmeg powder
  • salt to taste

Method

  1. Mix the nachni flour and regular flour in a big bowl. Add salt and water and knead a firm dough.
  2. Roll the dough to a thin roti and cut triangles of it.
  3. On a baking tray, dust some flour and place the triangles.
  4. Bake the nachos in the oven until crisp.
  5. In a pan, heat the oil and add the wheat flour. Stir so that no lumps are formed.
  6. Slowly add milk while whisking the flour to get a smooth consistency of the sauce.
  7. Add spinach puree, mixed herbs, salt, pepper and nutmeg and stir. Cook for 2 minutes.
  8. Remove the nachos from the oven and arrange them on a plate.
  9. Drizzle the cream sauce on it and serve.
  10. You can also add some fresh salad or olive and kidney beans to load them with nutrition.
