Healthy snacks for kids: Potato and whole-grain bread pinwheels

Every time I pack my kid's tiffin, I wonder if my toddler will finish her food that day or not. The days she finishes even 50% of it, I know that particular recipe is a hit. But what makes me even more happy is when I make something that's simple, easy and quick, and my tot likes it. What better than that, right? Some recipes are classic and most kids love them, like chicken nuggets. So when I came across this recipe for potato pinwheels, I knew it would be a hit with kids. But here was the catch. While most children love potatoes, my daughter isn't a fan. She has never liked french fries, which is a classic crowd pleaser! So I wasn't very hopeful with this recipe, but I thought I'd give it a try nonetheless, because it looks interesting and I thought my daughter might appreciate some change from the regular food. The result? She LOVED it. I packed about 10 pieces of pinwheels and she ate 6 out of them. Not bad, given that I had packed extra since she shares her food with her classmates. If you are a mom fretting over healthy snacks for kids, do give this a try.

Ingredients

  • Boiled potato - 1 cup
  • Brown bread - 8 slices (should be very fresh)
  • Cornflour - 1 tbsp
  • Water
  • Mint leaves - a handful
  • Seasoning - salt, red chili, chaat masala
  • Oil - for frying

  • Mix the mashed potatoes, mint leaves and the seasoning.
  • Make a runny paste with cornflour and water.
  • With a rolling pin, flatten the bread. Spread a spoonful of potato mix on the bread in a thin later.
  • Roll the bread. Stick the end with cornflour paste.
  • Cut it into pinwheels.
  • Make similar pinwheels with rest of the bread.
  • Heat the oil.
  • Dip a pinwheel in the cornflour paste and fry till golden brown.
  • Serve with your choice of dip, or pack the pinwheels in your kid's snack box.
