You will need:

  • 1 tablespoon vegetable oil
  • 2 tablespoons lime juice
  • 3 thinly sliced peaches
  • teaspoon smoked paprika
  • 1 tablespoon minced jalapeno
  • cup thinly sliced red onion
  • 8 lettuce leaves
  • 2 cups cooked shredded chicken
  • Cilantro to garnish
  • Pinch of black pepper
  • Sea salt to taste

Method:

  • In a bowl whisk, 1 tablespoon vegetable oil, two tablespoons lime juice and teaspoon smoked paprika.
  • Then season with a litter black pepper and sea salt.
  • Then add cup thinly sliced red onion, three thinly sliced peaches and one tablespoon minced jalapeno.
  • Finally, add the two cups cooked shredded chicken and toss all the ingredients well.
  • Then divide the mixture among eight lettuce leaves such that it looks like a lettuce wrap and then garnish with cilantro.
