Healthy salad recipe -- Chestnut and jackfruit seeds salad

Here is a simple healthy salad recipe that your family will love!

I was one of those people for whom salad was always an accompaniment to the main meal, and never the main meal itself. When I thought of salad, I could only think of carrot, cucumber, onion and beetroot, sliced and sprinkled with chaat masala. It was only when I started reading up on salad recipes that I realised that salads are delicious and fun. You can actually eat a healthy salad for, say, lunch and be satiated! I love this water chestnut and jackfruit salad that is quick to toss up and always turns out delicious. It is rich with the bursting flavours of chilli, pepper, thyme, honey and pineapple adds the right amount of sweet-tangy taste. Water chestnuts are crunchy and have a light taste. Roasted jackfruit seeds, healthy as it is, lends this salad the right amount of crunch, as do the peanut. All in all, this salad is a real winner at dinner parties or when I am in no mood to cook but want to eat something delicious and filling. Try it out and let me know how you liked this recipe.   • Water chestnut, boiled -- 1 cup
  • Jackfruit seeds, roasted and slivered -- 1/2 cup
  • Peanuts, roasted -- 2 tablespoons
  • Salt and black pepper to taste
  • Thyme, oregano and red chilli flakes -- for sprinkling
  • Sesame seeds, toasted -- 1 teaspoon
  • Raw honey -- as per taste
  • Iceberg -- one bunch
  • Pineapples, chopped -- half cup


  • Clean the water chestnut, wash and cut it into bite-sized pieces.
  • Chop jackfruit seeds into bite sized pieces too.
  • Chop the iceberg and wash it with ice-cold water.
  • In a bowl, add all the ingredients, except for seasoning and sesame seeds.
  • Give it a good mix. Now add seasoning as per taste.
  • Toss the salad to mix up everything. Garnish with sesame seeds.
  • Serve with soup.
