Oats upma: Heat one tsp of olive oil in a kadai, add mustard, jeera and channa dal. Once it splutters, add chopped onion and saute till golden brown. Add chopped chillies and ginger and saute for 3 minutes. Add all the vegetables and sauté briefly. Add water to the vegetables and bring to a boil. Add salt and oats and mix thoroughly. Cover with a lid and cook till the oats are cooked.

Ingredients For Vegetable Salad

1 cup of Soya Chunks, boiled and squeezed dry

4 Lettuce leaves

1 chopped onion

12 button mushrooms

5-6 cherry tomatoes

handful of green olives and black olives for garnishing

2 tbsp oil

For Vegetable Salad Toppings

5 tbsp of hung curd

2 tsp of cheese spread

2 tsp of mayonnaise

1 tsp of tomato ketchup

1 pinch of white pepper powder

Salt to taste

Method For Vegetable Salad

Heat some oil in a moderately hot wok and stir fry the Soya Chunks until they turn golden brown. Please remove them and put them aside once golden brown.

Saute till slightly crunchy and set aside

Heat the same wok over a high flame and stir-fry mushrooms for half a minute. Take them out in another bowl, put them aside, and allow the cooked vegetables to come to room temperature

Next, transfer all the vegetables and salad greens into a bowl. Place the bowl in the refrigerator for a while to chill before serving.

In another bowl, mix all the ingredients of the toppings and keep them in the refrigerator. TIP: A chilled dressing makes the salad taste even better!

Sprinkle a handful of baked croutons. Your nutritious and flavorful salad is now ready to be enjoyed.

Ingredients For Oats Upma

1 cup of Oats (Rolled Oats)

1 small onion & carrot, finely chopped

1 green chilli, finely chopped

1 tsp mustard and cumin seeds

1 tsp cumin seeds

8-10 curry leaves

2 tbsp oil

Method For Oats Upma

Add the mustard seeds and cumin to the pan. Saut until the onions turn translucent

Add chopped carrots, turmeric powder, red chilli powder, and salt. Mix well

Add the roasted oats to the pan and mix everything.

Mix well. Cook until it has absorbed the water. Stir occasionally to prevent sticking
