Mujadarah Safra is a delicious Middle Eastern dish that combines lentils and rice with fragrant spices and caramelized onions. The lentils and rice make it a nutritious and filling meal, while the spices and onions add a depth of flavour that is simply irresistible. Ingredients:

- 1 cup Fortune Masoor Malka Dal, rinsed

- 1 cup Fortune Biryani Special Basmati Rice (long-grain white rice)

- 3 large onions, thinly sliced

- 4 cups water

- 4 tablespoons Fortune Sunflower Oil

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- teaspoon ground cinnamon

- Salt, to taste

- Fresh parsley or cilantro, chopped (for garnish)

Method:

1. Soak the rinsed Fortune Masoor Malka Dal in 2 cups of water in a medium saucepan for 20-25 minutes until tender.

2. Heat 2 tablespoons of Fortune Sunflower oil. Once caramelized, remove half of the onions from the skillet and set aside for garnish.

3. Add the Fortune Biryani Special Basmati Rice to the skillet containing the remaining half of the caramelized onions. Stir and toast the rice for a few minutes until it becomes slightly translucent.

4. Stir in the ground cumin, coriander, cinnamon, and salt to taste. Bring the mixture for 15-20 minutes.

5. Once the dal is cooked, combine it with the rice in the skillet.

6. Transfer the Mujadarah Safra to a serving platter or individual plates. Garnish it with the reserved caramelized onions and chopped parsley or cilantro.

7. Mujadarah Safra can be served hot or at room temperature. This Middle Eastern classic pairs well with yoghurt, salad, or pickled vegetables.
