Turbocharged Golden Milk
When, as kids, our grandmas offered us haldi doodh, literally translated as turmeric milk, we didn't have the faintest idea that a few decades later, cafes in the world's trendiest cities would be serving it as 'golden milk lattes' in various incarnations. So, in homage to that simple, potent brew we grew up on, here's a turbocharged version with additional spices for flavour and health-enhancing qualities.
Ingredients:
2 cups (480ml) milk of choice
1 cup (240ml) water
1 tsp or more ground turmeric
2 black peppercorns
inch (12mm) cinnamon stick, preferably Ceylon
4 to 6 cardamom pods, gently crushed to expose the seeds or tsp ground cardamom
1. Combine the milk and water over medium heat in a saucepan.
2. Add the ground turmeric, black peppercorns, cinnamon stick, and crushed cardamom pods to the saucepan.
3. Stir the mixture gently and bring it to a gentle simmer.

4. Let the mixture simmer for about 10 minutes to allow the flavours to infuse, stirring occasionally.
5. Remove the saucepan from the heat and strain the golden milk to remove the spices.
6. Stir in honey or your choice of sweetener to taste.
7. Pour the turbocharged golden milk into mugs and enjoy its soothing and aromatic flavours.
Spiced Chia Pudding
Chia seeds have recently gained popularity, and everyone is stocking up their racks because of their health benefits. So with this, Spiced Chia Pudding is becoming everyone's favourite, packed with plant-based protein, fibre, and healthy fats. Top it with whatever you like, such as pistachios and berries, a little blueberry, chocolate chip, and maple syrup action for kids.
Ingredients:
2 cups (480ml) milk of choice
Pinch of saffron
tsp ground cardamom
tsp cinnamon
A bit of vanilla bean powder or tsp vanilla extract
6 tbsp (60g) chia seeds
Pistachios for serving
Berries for serving
Sweetener of your choice for serving
Instructions:
1. mix the milk, saffron, ground cardamom, cinnamon, and vanilla until well combined.
2. Add the chia seeds and stir thoroughly to avoid clumping.
3. Let the mixture sit for 5 minutes and then stir again to break up clumps.
4. Cover and refrigerate the mixture for at least 2 hours, or overnight if possible, to allow the chia seeds to expand and form a pudding-like consistency.
5. Once ready to serve, divide the pudding into serving cups and top with pistachios, berries, or sweeteners.
6. Enjoy your spiced chia pudding as a nutritious and delicious treat!
