The onset of cold weather calls for winter-special delicacies crafted from seasonal delights and traditional recipes. Jaggery, peanuts, sesame seeds, and other seasonal ingredients create comforting dishes. We have curated three easy-to-prepare recipes for this winter season: Gur Makhana Ladoo, Peanut Chikki, and Gond Pak (using honey). These delightful treats are prepared with wholesome ingredients, combining delicious flavours with nourishing goodness.

Gur Makhana Ladoo:A delicious and healthy ladoo that can be a nutritious snack on chilly days.

Ingredients

  • 100 grams of Fox Nuts (Makhana)
  • cup of Cashew
  • cup of Almonds
  • 1 tablespoon of Fennel seeds
  • 5-6 nos. of Cardamom
  • teaspoon of Black cardamom seeds
  • 2 tablespoons of Sesame seeds
  • cup of Dry desiccated coconut
  • Handful of Raisins
  • 2 tablespoons of Oil
  • 2 teaspoons of Dry ginger powder

For Syrup

  • 1 cups of Jaggery
  • cup of Water
  1. Preparation time: 25 mins
  2. Serves: 8

Steps To Follow

  1. Begin by dry roasting makhana in a deep-bottomed pan. Keep checking to see if it does not turn brown while roasting. Once done, cool it and grind it into a powder.
  2. Then, grind this mixture and mix in desiccated coconut and some raisins.
  3. Take another pan, add jaggery and water, and bring the mixture that forms on top of the syrup.
  4. On the sidelines, heat Oil in a deep pan and add makhana powder and dried fruit powder. Roast them until they become golden and fragrant. Once roasted, add the jaggery syrup and cook it for 30 seconds by carefully folding it in.
  5. Cool the mixture, and once it has set, shape it into round balls with your hands. The ladoos are now ready to be served.

Peanut Chikki:A popular traditional snack that packs in the sweetness of jaggery and crunchiness of peanuts

Ingredients

  • 2 cups of grated Gur
  • Oil for greasing
  • 2 cups of unsalted Peanuts

  2. Serves: 4

Steps To Follow

  1. Add the peanuts to a pan and roast them lightly. Remove them from the heat, split them, and set them aside.
  2. Next, in a fresh pan, add jaggery and allow it to melt on low heat. Once it starts to boil and change colour, take a spoonful and drop it in cold water
  3. Scoop it out and check if it crackles with a cracking sound when chewed.
  4. Drop a bit of Oil on a marble top and lightly grease it. Pour the hot mixture on this greased surface, using a metal plate to spread it.
  5. Mould them with your hands into a round shape.
  6. Let it cool completely, and once hardened, serve

Gond Pak using Honey:A nutritious and comforting sweet dish prepared especially during winter.

Ingredients

  • 3 tablespoons + 1 tablespoons of Oil
  • 300 gms of Edible Gum (Gond)
  • cup of Desiccated Coconut
  • 400 gms of Khoya (Mawa)
  • 2 nos of Black Cardamom
  • cup of chopped Almonds
  • cup of chopped Cashew nuts
  • cup of chopped Walnuts
  • cup of Honey
  • Handful of Cashew nuts
  1. Preparation time: 30 mins
  2. Serves: 4

Steps To Follow

  1. Take a deep-bottomed, heated oil over medium heat and fry the prawns in the edible gum until they puff up. Then, transfer the prawns from the pan to a plate and set them aside.
  2. In the same pan, saut desiccated coconut and khoya until they melt and become soft. Add crushed black cardamom seeds to the mixture.
  3. Then, add the chopped almonds, cashew nuts, and walnuts, and continue stirring and cooking the mixture for a few minutes until the nuts are slightly roasted. Pour the Honey into the pan, mix it well, and cook for a few more minutes until it thickens.
  4. Add the fried edible gum to the mixture and mix it until it is well coated with the other ingredients.
  5. Brush some Oil on the base of a steel thali, transfer the gond pak into it and press it evenly.
  6. Then, cut them into equal cubes. Garnish each cube with a cashew nut on top and serve it.
