Healthy Recipe -- Herbed chicken

You must have surely tried our herbed chicken steak with coleslaw and loved it! To keep things interesing, here's one more chicken recipe that you'll surely love. Herbed chicken is so delicious and bursting with flavour that it will definitely become your comfort food. Here's a tip: you can marinate the chicken and store in the freezer to cook whenever you want!

Serves: 2

Ingredients

  • Chicken- 6 medium pieces
  • Onion (sliced)- 1/2 medium
  • Capsicum (sliced)- 1/2 medium
  • Garlic (chopped)- 3-4 cloves Crushed pepper- 1/2 teaspoon
  • Oregano- 1/2 teaspoon
  • Chili flakes- 1/2 teaspoon
  • Thyme- 1/4 teaspoon
  • Rosemary- 1/2 teaspoon
  • Lemon juice- 2 teaspoons
  • Salt- as per taste
  • Oil- 2 tablespoons

Method of preparation

  • Pre-heat the oven to 220 degrees celsius.
  • In a mixing bowl, mix chicken pieces, sliced onion, capsicum, chopped garlic, spices and herbs, salt, lemon juice and oil together till each piece of chicken is properly coated with all the herbs.
  • Place this mixture on a baking dish and bake it for 25 mins at 200 degree celsius.
  • If it is still uncooked, bake it for additional 10 minutes at 160 degrees celsius. Serve it hot with other vegetables.

Health-o-meter: People mostly consume chicken in fried form during Iftar. But baking it is not at all difficult. Though baking is more time consuming, it is far more healthier than fried form of chicken. Spices and herbs help in secretion of gastric juices and aid in digestion.
