If you think vegan means boring, bland food and you have to give up eating your favourite desserts then you are mistaken. Lisa Pitman, a vegan herself, shares her recipe of a tropical parfait with us. A parfait is a cold dessert which consists of several layers. Here's you can make it in minutes at home. This dish has fruits and nuts and is extremely healthy. She recommends eating this for breakfast.

Step 1: Add two dates and the orange zest to a food processor and chop the dates. Next add the almonds, oats, apricots and a pinch of salt. Grind it to create a grainy texture. Remove and set aside. Rinse the food processor.
Step 2: In the clean food processor, combine the papaya, orange juice, the remaining two dates and a pinch of salt. Blend until completely smooth. Remove and set aside. Rinse the food processor.
Step 3: In the clean food processor, blend the two frozen bananas until a soft ice cream texture is achieved.
Step 4: Divide half of each component between two large or four small glasses, adding one layer at a time. Repeat the layers to use up the remaining components.
Step 5: Makes 2 large or 4 small servings.
